Gluten Free Chocolate Hazelnut Cookies

Prep Time: 10 Minutes
Cook Time: 8-10 Minutes
Makes: 10-12

Ingredients:

3/4 cup Hazelnuts

1/2 cup Almonds

1/2 tsp Baking powder

2 tbsp Cacao powder

Pinch salt

1/2 – 1 tbsp Cacao nibs (depending on how bitter you like your chocolate)

1 tbsp Almond butter

2 tbsp Coconut oil (before melting)

3 – 4 tbsp Brown rice syrup or maple syrup

3 Drops of pure vanilla extract

 

Method:

1. Preheat the oven to 160 and line a cookie tray with baking paper.2. Grind the nuts in a coffee grinder or food processor, add them to a large bowl and combine with the rest of the dry ingredients.

3. Melt the coconut oil (I prefer to use coconut butter because it has no flavour), mix it in a bowl with the syrup, almond butter and vanilla.

4. Add wet to dry and combine thoroughly. Roll into walnut sized balls and press down with a fork in two directions to form a rough edged cookie with cross cross pattern on top.

5. Bake for 8 – 10 minutes. be careful not to go longer because they are not so nice burnt and you can see them browning because they are so dark. They will be soft when you bring them out but will harden as they cool.
