Cook Time: 30 Minutes
Equipment needed: Mixing bowl + Fry Pan (too easy!)
Serves: 2-3 people
Ingredients:
200g Tinned Salmon, drained (Use Organic and mercury free when possible)
1/2 cup Frozen Peas, thawed
1 heaped tsp Preservative-free Thai curry paste
2 Free Range Organic eggs
2 tbsp Coconut Flour
1 heaped tbsp Sesame Seeds
1 Spring Onion, finely chopped
1/2 tsp Grated Ginger
1/2 tsp Turmeric Powder
Method:
1. Place peas in a mixing bowl and roughly mash with a fork.
2. Add salmon and curry paste to the mashed peas and combine thoroughly. Whisk the eggs and then add them to the mix too.
3. Sprinkle over the coconut flour (use a sieve if you want to be a bit methodical about it, so you don’t get lumps) then stir this in. If you are using the other ingredients listed (i.e. the sesame seeds, spring onion, ginger, turmeric and chilli) add them in now too.
4. Using your hands, gently form the mixture into patties (I made 8 small patties) approximately 1 cm thick. If your mixture seems too wet to form into patties try adding a tiny bit more coconut flour, but go easy as the stuff is very dry.
5. Heat a frypan up to a medium heat and add a teaspoon of coconut oil. Cook the patties for approximately 4 minutes on each side, they should turn a nice golden brown. Serve with a crunchy raw salad, and drizzle over some sesame oil, tahini and/or natural yoghurt if you like.
These cakes are such a great easy and quick meal to make. You can eat them straight away or make a batch in bulk to save some for future lunches or as a yummy snack throughout the day.
